Nestled in a beautiful part of the Sussex countryside near to Ashdown Forest, is High Weald Dairy, run by Sarah and Mark Hardy.
The award-winning range of organic speciality cheeses extends from sheep's milk to cow's milk products, from hard and soft English-style cheeses to Mediterranean-styles such as halloumi and feta.
Here at Infinity we stock nearly all of the delicious range of products that the skilled cheese makers at High Weald craft in their
dairy. Alongside the familiarity of halloumi, feta and ricotta are the hugely popular sheep's milk cheeses such as the Duddleswell, Pecorino, and Sussex Slipcote.
Noteworthy also are the organic Tremains Cheddar and Ashdown Forester cheeses that are made using organic milk from their own farm, thus offering reassuring 'traceability' as well as a reduction in food miles.
