Amy's Baked Apples

Amy's Baked Apples

These are so simple and easy to make yet they are such a delicious and healthy dessert.  A great way of using our wonderful, local organic apples from Oakwood.

1. Preheat the oven to 190°C/375°F/Gas mark 5

2. Wash the apples and score a line around the middle (horizontally) just piercing the skin.  Remove the core, either using an apple corer or VERY CAREFULLY with a sharp knife.

3. Push about 5 or 6 cloves into the skin of each apple

4. In a bowl mix the almonds, hazelnuts, sultanas and apricots.  Add the cinnamon powder and grated nutmeg and mix well.

5. Put the apples into an ovenproof dish, standing upright, and fill the cores generously with the fruit and nut mixture.  Pour a small amount of boiling water into the bottom of the dish (about 2cm deep).  Place the dish in the oven for about 30 minutes or until the apples are well cooked (don’t let the water dry out).  Test by putting a knife through the skin, they should be soft and fluffy.

6. Honey can be added to sweeten, if necessary, and then serve with your choice of topping (they are equally delicious served just as they are)!  For an extra special treat the fruit can be soaked overnight in a little brandy.
 

Ingredients

Serves 4

  • 4 medium cooking apples (or large eating apples if cookers are unavailable)
  • 20 whole cloves
  • A handful of blanched almonds, chopped
  • A handful of hazelnuts, chopped
  • A handful of sultanas
  • A few dried apricots, chopped
  • 1 tsp cinnamon powder
  • ½ tsp grated nutmeg

 

To serve:

  • Clear honey/maple syrup
  • Crème fraiche/ice cream/custard
  • Or soya alternatives
