Fair Trade Pancakes
This is a simple, traditional pancake recipe to which you can add the fillings of your choice! We have suggested some tasty, fair trade options which we think are delicious. If you are in any doubt and would like to try before you buy then pop into our store on Shrove Tuesday, February 24th where our bakers will be whipping up pancakes with a choice of fair trade fillings to celebrate Fairtrade Fortnight.
1. Sift the flour into a large mixing bowl and then create a 'well' in the middle. Place the eggs in the well and begin whisking the eggs, incorporating the flour from around the edge as you go.
2. Next, slowly add the milk, pouring small quantities in to begin with and continuing to beat vigorously. Once all the milk has been added give a final whisk to make sure all lumps have disappeared and the batter is of a smooth consistency. If using, you can now add the rum. Leave the batter to stand for one hour.
3. Melt a small knob of butter in a pan and make sure that it is spread over the whole pan (use a bit of paper or kitchen towel). Over a medium heat add about 2 tbsp of the batter and immediately tip the pan from side to side to allow the batter to spread and cover the whole surface evenly. It should
take about half a minute or so to cook on each side, maybe less on the second side. Use a large palette knife or pan slice to turn the pancake over.
4. After making your first pancake you will be able to adjust the amount of batter you use for each one according to the pan size and the required thinness of pancake! As each pancake is made you can pile them up on a plate kept in the oven on a low heat to keep them warm.
